Red Rice Poha, or flattened/beaten red rice (also known as red aval or avalakki) is rich in iron, protein and fiber. Foods rich in fibre can aid in weight loss, control blood sugar and lower cholesterol. Red rice is also rich in B vitamins, calcium, zinc and iron, manganese, selenium, magnesium and other nutrients. It is also enriched with antioxidants that can help fight damageing free radicals – red rice gets its rich colour from an antioxidant called anthocyanins that is believed to reduce inflammation, allergy, prevent risks of cancer and help in weight management.
Cooking instructions: Red rice has a beautifully, nutty flavour when cooked. Soak poha in water for a few minutes. The poha must become soft but remain intact and separate. Add to cooked vegetables and cook further. Red rice poha can be served as a light snack and is a nutritious breakfast option, especially when combined with vegetables and protein. Adding lemon juice to the preparation helps in better absorption of iron in red rice.
