Enjoy fluffy idlis and delicious dosas for breakfast or as a nutritious snack anytime! Idli rice is short-grained, parboiled rice specially processed for making idlis and dosas. Parboiled rice is treated with a special steam-pressure process before milling. The grain is soaked, steamed, dried and then milled to remove the outer hull, resulting in rice that has double the fibre and half the glycemic load of regular white rice.
Cooking instructions: Soak idli rice overnight. Grind with water and other ingredients (urad dal, methi seeds etc.) to make idli or dosa batter.
Store in an airtight container in a cool, dry, dark place.
