SERVES: 1 TIME: 5 minutes Recipe credit: HappyHealthyMe Ingredients 1/4 cup red rice 1/4 cup chopped cashews 1/4 cup raisins 2 cups jaggery powder 5 cups water 1 tsp cardamom powder 2 tbsp ghee 2 cups coconut mylk Method Wash the red rice thoroughly and drain the water. Grind till coarse and set aside. Fry cashews and raisins in ghee and set aside. Add the water in a pressure cooker and when it starts to boil, add the rice and cook on a slow flame for a few minutes. Close the cooker and let it continue to cook on slow flame for 1-2 whistles. Once the pressure is released, open the cooker and add jaggery powder, fried cashews and raisins and cardamom powder. Stir gently. Finally, add the coconut mylk and gently stir while cooking on slow flame till it is well combined. Serve hot or cold.
