Red Rice Kheer

  • 1/4 cup red rice
  • 1/4 cup chopped cashews
  • 1/4 cup raisins
  • 2 cups jaggery powder
  • 5 cups water
  • 1 tsp cardamom powder
  • 2 tbsp ghee
  • 2 cups coconut mylk


  • Wash the red rice thoroughly and drain the water. Grind till coarse and set aside. Fry cashews and raisins in ghee and set aside. Add the water in a pressure cooker and when it starts to boil, add the rice and cook on a slow flame for a few minutes. Close the cooker and let it continue to cook on slow flame for 1-2 whistles. Once the pressure is released, open the cooker and add jaggery powder, fried cashews and raisins and cardamom powder. Stir gently.
  • Finally, add the coconut mylk and gently stir while cooking on slow flame till it is well combined. Serve hot or cold.
