Quinoa Upma

  • 1 cup quinoa upma
  • 3 ½ cups water
  • 1 medium onion, chopped
  • 1/4 cup carrots, chopped
  • 1/4 cup green peas
  • 1/4 cup beans, chopped
  • 2 green chilies, chopped
  • 1 sprig curry leaves
  • 1 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp peanuts
  • 2 tbsp cold-pressed sunflower oil
  • 1 tsp coriander leaves, chopped
  • 2 Tbsp grated coconut
  • Juice of 1 lime
  • Salt to taste


  • Soak quinoa for half an hour. Bring 3 cups of water to a boil, add the soaked quinoa and cook until done. Drain the excess water and keep aside.
  • In a kadai, heat oil and temper the mustard and cumin seeds. Add curry leaves and onions and fry till they are translucent. Add peanuts and fry till they start to change colour. Add green chilies, carrots, beans and peas and fry for another minute. Add salt and the remaining water. Cover the kadai with a lid and let it simmer.
  • Remove the lid after 5 minutes and add the cooked quinoa. Mix well. Add lime juice, mix well and remove from flame. Garnish with coriander and coconut. Serve hot as is or with chutney.
