Brown Basmati Pulao

  • 1 ½ cups brown basmati rice
  • 2 carrots chopped
  • 1 onion (sliced)
  • 1 inch cinnamon stick
  • 1 tsp chana dal
  • 3 cloves
  • 1 bay leaf
  • 1 tsp cumin seeds
  • 1 garlic (made into paste)
  • 1 medium ginger (made into paste)
  • 4-5 green chilies
  • 2 tbsp cold-pressed sunflower oil
  • 4 cups water
  • Chopped coriander (optional)
  • Golden fried onions (optional)
  • Salt to taste


  • Heat oil in a pot, add cinnamon, cloves, bay leaf and cumin seeds and sauté till cumin seeds change colour. Add onions and sauté till light brown. Then add the ginger and garlic paste and sauté until the raw flavour goes away. Add green chillies and carrots and fry well.
  • Add washed brown basmati rice and mix well to combine all the ingredients. Add the water and salt and bring to a boil. Cover and cook on low heat till all the water is absorbed and the rice is cooked. Garnish with chopped coriander and golden fried onions (optional). Serve hot.
