Originally from China, adzuki beans have a sweet, nutty flavour and are said to support kidney, bladder and reproductive function. With a low fat content and low glycemic index, adzuki beans are a good source of magnesium, potassium, iron, zinc, copper, manganese and B vitamins.
Soaking grains and legumes for 6-12 hours is essential for optimal absorption and digestion. After soaking, add water and pressure cook or simmer until cooked. Use these protein-rich legumes in savory Indian curries, soups and rice dishes or grind in flour for use in baking; or sprout for use in salads and stir-fries.
